Vegetable Chow Mein

Indians love Indo-Chinese and Chow Mein is one of the most popular dishes from the cuisine. This vegetable chow mein recipe yields noodles mixed with stir-fried vegetables and all classic condiments like soy sauce, vinegar and chili sauce. This dish is served at almost every food giant in India.

Ingredients

  • Noodles                                                      1 packet
  • Water                                                         To boil noodles
  • Salt                                                            To taste
  • Cooking Oil                                                 As required
  • Garlic paste                                                2 teaspoons
  • Green chili paste                                         1 teaspoon
  • Onion, thinly sliced                                     1
  • Vegetables, thinly sliced                              1 cup

  (carrots, cabbage, capsicum etc.)

  • Soy sauce                                                    1 teaspoon
  • White Vinegar                                             2 tablespoons
  • Chili sauce                                                   1 teaspoon

Procedure

  1. In a deep saucepan pour 1 teaspoon of oil and enough water to boil noodles and put it on medium-high heat.
  2. Add in noodles and boil for 10 minutes or until just al-dente. Drain the noodles and keep under running water in a colander to cool.
  3. Drizzle 1 tablespoon of oil and toss the noodles so as to coat them with a thin layer of oil. It will help preventing them to stick with each other. Keep aside.
  4. Put a wok over medium-high heat with 4 tablespoons of oil in it. Stir in garlic, chili paste and onion.
  5. Saute for a couple of minutes or until onions are translucent and garlic is fragrant.
  6. Stir in veggies and stir-fry for 2 to 3 minutes on high heat. Stir in soy sauce, vinegar, chili sauce and a pinch of salt.
  7. Stir-fry further for a minute then mix in cooled noodles. Toss and stir-fry for 3 to 4 minutes or until noodles are heated through.
  8. Transfer onto serving platter and garnish with sliced tomato, carrot or green onion. Serve immediately.
